Wild Mushroom Risotto

  • Ingedients:
  • 300g of Arborio rice
  • 1/2 medium onion finely chopped
  • 2 cloves garlic finely chopped
  • 50g butter
  • 1 glass of white wine
  • 1 litre vegetable stock
  • 50g dried Porcini mushrooms
  • 1 cup of frozen peas
  • 1 cup parmesan cheese
  • Salt & pepper to taste


  1. Melt butter in large pan /wok
  2. Gently fry onion & garlic until clear
  3. Add rice and coat well with butter
  4. Pour in white wine and stir gently till absorbed
  5. Add the vegetable stock in small batches stirring gently and wait until absorbed until adding more
  6. Add peas, reconstituted mushrooms and stir in well
  7. season with salt & pepper
  8. Add parmesan cheese in batches
  9. Continue to add stock in batches until all used up
  10. Continue moving rice regularly around until chicken & rice is cooked and the rice has a soft and glutinous sheen
